Ingredients for pie crust (6 to 8 people)
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon baking powder
- 6 tablespoons cold unsalted butter, sliced
- 3 tablespoons cold vegetable shortening, sliced
- 4 tablespoons cold water
Pie crust recipe
- Combine the flour, salt, and baking powder in a large bowl. Mix with a whisk.
- Add the butter and shortening. Mix with your hands.
- Add the water. Mix to form a ball.
- Wrap the dough in plastic wrap. Refrigerate for at least 45 minutes.
- Take the dough out of the refrigerator. Roll the dough. Transfer the dough to a 9-inch pie pan.
- Cover pie crust with parchment paper. Fill the pie pan with dried beans. Bake at 375°F for 20 minutes.
- Remove from oven. Remove the dried beans and parchment paper.
- Proceed with the pumpkin pie recipe.
Ingredients for pumpkin pie
- 15-ounce pumpkin puree
- 14-ounce sweetened condensed milk
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
Pumpkin pie recipe
- Whisk pumpkin puree, sweetened condensed milk, eggs, spices, and salt in a medium bowl until smooth.
- Pour into crust. Bake at 375°F for 50 minutes or until the knife inserted comes out clean.
- Cool before serving.
